Step by step

  1. 1

    Grind Fresh

    Grind your beans right before you brew and skip the pre ground coffee. Of everything on this list, fresh grinding makes the biggest difference to how good your cup tastes.

    Rinse the paper

    Rinse the filter with hot water to wash out any papery taste and warm up the dripper. Here is the part most people miss: do not press the paper flat onto the bottom of the dripper. Leave a small gap so water can drain freely, which stops the brew from stalling or clogging.

    Add and level

    Add your ground coffee to the dripper, then gently tap or shake it until the bed sits flat. A level bed lets water flow through evenly, which gives you a more even extraction.

    First pour, the bloom

    Set your scale to zero and start the timer. For the first pour, add about three times the weight of your coffee in water, around 50g for a 16g dose, and wet all the grounds. This is the bloom, where the coffee lets out trapped gas so it can brew cleanly.

    Second pour

    At 45 seconds, start your second pour and bring the total up to 160g. Try to finish this pour around the 1:05 to 1:10 mark. That timing sets the flow rate we like, so keep your pour steady and controlled.

    Final pour

    At 1:30, begin your last pour and take the total water up to 265g. Aim to finish pouring by around 2:00 to 2:05, which leaves the coffee enough time to drain before three minutes.

    Let it draw down

    Let the water draw all the way through the bed. It should finish somewhere between 2:30 and 3:00. Keep an eye on your total time, because that is what helps you fine tune the next brew. If it ran long, grind a little coarser. If it ran fast, grind a touch finer.

    Taste and enjoy

    Give the coffee a stir to mix it evenly, then pour and taste. Notice what you like and what you might change next time, and enjoy.
